Organic Apricot, Nut & Seed Muesli Bars (GF, DF, RSF)

Organic Apricot, Nut & Seed Muesli Bars

You'll need:

1 cup Organic Desiccated Coconut
1 cup Organic Pumpkin Seeds
1/2 cup Cashew Pieces
1/2 cup Organic Buckwheat Groats
1/2 cup Wild Walnut Pieces
1/2 cup Organic Hemp Seeds
1/2 cup Blanched Almond Flour
1/2 cup Organic Dried Apricots, chopped
Pinch of Salt
150g Coconut Oil
50g Cocoa Butter
50g Butter (optional, replace with Coconut Oil for completely dairy free!)
1/3 cup Honey
1/4 cup 70% Dark Chocolate Chips, optional
1 tsp additional Coconut Oil - for the optional chocolate topping

Place your coconut and all of your nuts and seeds except for your hemp seeds and almond flour into a large pan, and toast over a medium heat. Toast until coconut is golden and the pumpkin seeds have started to crack and release their oils. Set aside and allow to cool slightly.

In a small saucepan, heat coconut oil, cocoa butter, butter, honey and salt over a medium heat. Allow to melt, and continue to cook and allow the butter to brown and the honey to caramelise for 4-5 minutes until a deep golden. Remove from the heat and set aside.

Add your hemp seeds, almond flour and dried apricots to your toasted coconut mixture. Pour in your coconut oil mixture and mix until well combined. Spread into a lined slice tin or extra large loaf pan.

At this stage, we like to melt the chocolate chips with the teaspoon of coconut. Melt them on high for 1 minute, and continue in 30 second intervals until completely melted. Drizzle across your muesli mix.

Place in the fridge and allow to cool and set completely. Slice and serve!
