Paleo Orange Chocolate Chip Muffins (GF, DF, RSF)
An Old Favourite Re-Invented! ?

One of our OG Mixes, our Paleo Base Cake, was designed with customisation in mind. The ultimate base cake that lends itself to any flavour you might imagine. From Carrot Cake, to Banana Cake, or this recipe to Orange Chocolate Chip Muffins - it's the on-hand mix you want sitting in your pantry for any given moment.
Orange Chocolate Chip Muffins
You'll need:
- 1x Single Base Cake Mix
- 1/2 cup Coconut Oil, melted
- 1/2 cup freshly squeezed Orange Juice
- Zest of 1 Orange
- 3 Eggs, at room temperature
- 1/4-1/3 cup Chocolate Chips
To make, simply preheat your oven to 180c and line a muffin tray.
Pour your base cake dry mix into a bowl, and mix in the rest of ingredients except the chocolate chips. Once fully incorporated, fold in your chocolate chips.
Disperse batter evenly between muffin tin and place into your oven to bake for 15-18 minutes or until golden and spring back to the touch.
Remove from the oven, allow to cool for 5 minutes before removing the muffins from the tray and allowing to fully cool before storing in an airtight container in the fridge. Enjoy!
