Otherwise known as creamed coconut, this tasty product is like eating coconut ice, without the pink colouring! Great for snacking on or adding to your homemade treats or curries – coconut butter is a great addition to your kitchen. You can use coconut butter instead of nut butters for a nut free alternative or even reconstitute with hot water to use as coconut cream.
The creamed coconut will have separated out into 2 layers when you receive it. A top layer of coconut oil and a bottom layer of coconut solids. These need to recombined before use. The jar should be tempered with warm to hot water to start with to prevent cracking of the jar through thermal shock.
Then simply place the jar in a pot of hot water to soften slightly. Open the jar and either cut and blend well with a sharp knife or scrape the contents into a food processor. Turn on until the contents are well blended. Then use in your favourite recipes. If you add an additional 2tbsp of coconut oil, you will find this becomes more workable when softened (such as spreadable).
