A fine sugar that is perfect for baking including in cookies, cakes and cupcakes, as it dissolves easily. It requires a much shorter cooking time to melt and caramelise, so it's perfect in recipes such as puddings, custard, ice cream and sorbet, where you don't want a gritty sugar texture.
As it is so light, it is also perfect for use in airy desserts such as soufflés and meringues- whip together with eggs or cream for a smooth texture.
