What You'll Need
- ½ cup oil (melted if using coconut oil)
- ½ cup water or plant-based milk
- 2 tbsp pure maple syrup
- 3 large eggs
- Optional: vanilla extract, frozen berries, ground ginger
Directions
- Preheat oven to 180°C and line a 20cm cake tin or 12-hole muffin tray.
- Place dry mix in a large bowl and stir to break up any clumps.
- Add oil, water/milk, maple syrup, and eggs. Stir gently until just combined.
- Pour into prepared tin or divide evenly into muffin cups.
- Bake for 20–25 minutes (cake) or 15–18 minutes (muffins), until a skewer inserted comes out clean.
