Supporting rural livelihoods
Kokonati organic coconut whipping cream is made from freshly grated coconut (90%) meat from mature kernels. The finely grated meat is steeped in purified hot water (10%) and strained through layers of cheesecloth in a purely mechanical process to extract the cream content. This 90% coconut cream is an excellent option for whipping too. Our coconut cream is not a brilliant white color. A bit of brownish liquid, which comes from the coconut shell, may naturally appear in some cans when the cream settles. This just goes to prove our product is 100% natural and not standardized by chemical processes. Any coconut cream that looks pure white may have been processed with bleaching additives. As we do not use preservatives, we do have to flash pasteurize the cream to be able to preserve, package and ship it from our tropical shores to cooler countries with climates not suitable for growing coconuts. How else can we share such a wonderful superfood with the rest of the world!

Contents may separate naturally. Before use, shake can or stir well to get an even texture. In cold weather (under 22 Deg C) place the can in a warm water bath for a few minutes and then shake well before opening. If needed strain through a sieve for extra free flow, using a spatula to force through any unmelted coconut milk fat through the sieve. This separation happens as our coconut milk and cream are free of any emulsifiers and stabilizers. So a little elbow grease is needed to use this 100% natural product!
Aroma and taste is freshly coconut. Depending on the harvest and season every batch of cream can vary in color and to a minor degree in taste as it is a natural cottage-industry product that does not use any chemical refining, additives, or preservatives to standardize the product like with large-scale commercially standardized coconut cream.
