Potato starch is a larger-grained starch that gelatinises at relatively lower temperatures. Sauces thickened with these starches are more translucent and glossy, and they have a silkier mouthfeel. Root starches also have less forward flavours once cooked. Best used towards the end of cooking if thickening a sauce, but is also brilliant in gluten free baking or as a component of a crumb for crispiness.
