Wild Rice is not actually a variety of rice, or even a grain. but is the seed of a North American fresh water aquatic grass; Zinania Aquatica. It can be ground as flour or used whole in a variety of baked goods, desserts and hot or cold savoury dishes. TO prepare, rinse 1 cup of wild rice before bringing to boil in 4 cups of water.
Reduce heat and simmer for about 45 minutes. or until the tender and the outer husks pop open.
