What You’ll Need
¾ cup oil (melted if using coconut oil)
¾ cup water or plant-based milk
2 tbsp pure maple syrup
3 large eggs
Makes: 1 x 20cm cake or 12 large muffins
How to Make
Preheat oven to 180°C and line your cake or muffin tin.
Pour dry mix into a large bowl and stir well to break up clumps.
Add all remaining ingredients and stir until just combined.
Pour into prepared tin or divide between muffin tins.
Bake for 20–25 minutes (cake) or 15–18 minutes (muffins), until the top springs back and a skewer inserted comes out clean.
