Our Keto Base Cake & Muffin Mix is your go-to for delicious keto-friendly baking. Made with blanched almond meal and organic coconut flour, it’s naturally sweetened with erythritol and free from gluten, grains, and refined sugars. Whether you’re baking a birthday cake or prepping muffins for the week, this versatile mix delivers a soft, moist texture and mild flavour you can customise with vanilla, spices, berries, or citrus zest.
What You'll Need (per batch)
- 100g butter or coconut oil, melted
- ¾ cup full-fat coconut cream*
- 4 large eggs*
- 2 tsp natural vanilla extract
*Room temperature ingredients are essential for best results
Makes
1 x 20cm cake or 12 large muffins
How to Make
- Preheat oven to 170°C (fan forced) and line your cake or muffin tin.
- Measure 315g of dry mix into a bowl and stir to break up clumps.
- Add all additional ingredients and mix until thick and fully combined.
- Pour into prepared tin or divide evenly into muffin cups.
- Bake for 30–40 mins (cake) or 12–15 mins (muffins), until golden and springy to the touch.
- Cool in tin for at least 20 minutes before removing.
