Bounty Slice (GF, DF, RSF)
Coconut and Chocolate - such a classic combo!
You can quickly whip this up on a Sunday night, it's perfect to go into the kid's lunchboxes all week long as a delicious energy hit with plenty of good quality fats from the coconut.
- 3 cups Desiccated Coconut
- 1/4 cup Maple Syrup
- 3/4 cup Coconut Oil, melted
- 1 tsp Vanilla
- Pinch of Salt
- 100g Chocolate Chips
- 2/3 cup of Almond or Cashew Butter
Mix together desiccated coconut, maple syrup, coconut oil, vanilla and a pinch of salt. Spread 2/3 of the mixture into a lined or greased baking tin.
Melt together your chocolate chips and almond or cashew butter, stirring until completely combined and smooth. Spread this over top of the bottom coconut layer.
Top the chocolate layer with the remaining coconut mixture in an even layer. Cover and chill overnight or until set.
Slice into squares once set.
