Roast Vegetable Fritters
Leftover with an abundance of roast vegetables? Make yourself some simple roast vegetable fritters! Mash two-thirds starchy vegetables such as potato, kumara (sweet potato) and pumpkin with whatever other roast vegetables you like, an egg (or two - if you're making lots), herbs of choice, salt, pepper and mix to combine. We love roast onions in this too! If you find your mixture is a little too wet, add a tablespoon of our organic tapioca flour. Pan fry in coconut oil until golden brown on each side.

Another easy but delicious recipe for your leftover Christmas Ham! Nothing beats eggs to start the day. Whisk 2 eggs and season with salt. Heat butter or coconut oil in a small non-stick skillet over a medium-low heat and add your eggs. Using a rubber spatula, lightly move the eggs around as they set up. When mostly set, add your chopped ham, any favourite vegetables such as spinach and allow to set to your liking. Flip one half over with the spatula and serve! -
