What You'll Need
120ml coconut oil, melted
4 tbsp full-fat coconut cream, at room temperature*
4 large eggs, at room temperature*
1 tsp instant coffee (optional)

Yields
1 x 20cm cake or 12 large muffins
How to Make
Preheat oven to 170°C and line your cake or muffin tin.
Pour dry mix into a bowl and stir well to break up any clumps.
Add the wet ingredients and stir until thick and fully combined.
Pour into cake tin or divide evenly between muffin tins.
Bake for 16–24 minutes for cake or 10–12 minutes for muffins. For a fudgier texture, bake for less time.
Let cool for at least 30 minutes in the tin before removing.
