Often times when it comes to wholefood slices, it feels like you're eating more dates than anything. We find when buying raw treats out, it often becomes a sugar overload! With dates plus additional sweetener, it definitely takes a hit in nutritional value.
We set out to create a beautiful slice that was not only delicious, but packed full of superfoods, nutrient dense and not overpowered by dates. Plus we wanted to showcase some of our finest ingredients - and we're pretty stoked that we stock every single thing in this recipe!
This slice contains a selection of nuts and seeds, raw organic cacao, cocoa butter, organic coconut and more. The various nuts and seeds are all packed with healthy fats, vitamins and minerals and reduce inflammation. Certain nuts are even beneficial for reducing the risks of heart disease! Nuts and seeds themselves are super nutrient dense and host a powerhouse of benefits!
Our raw organic cacao is packed full of antioxidants - in fact 40 times the amount of antioxidants found in blueberries! It's the highest plant based source of iron and also contains more calcium than cow's milk as well as being full of magnesium and a natural mood booster.
Cocoa butter, probably one of the ingredients you're least familiar with, is a beautiful source of fat. Cocoa butter is also rich in natural plant compounds called phytochemicals. These substances may improve blood flow to the skin and slow skin aging by protecting against damage from the sun’s harmful UV rays.
It's no secret that coconut itself is one of nature's best superfoods. Extremely nourishing and full of healthy fats with a delicious flavour. The nutritional benefits of coconut range from improving brain health, heart health and cardiovascular health as well as being great for your iron levels.
So not only can you rest assured you're eating a nourishing snack, but you can share those benefits with everyone else you feed it to. Although it's pretty delicious and we demolished it pretty quickly! This recipe makes quite a large serving, so feel free to halve it.
The cocoa butter does make it a lot more room temperature stable compared to something such as coconut oil, but we do recommend keeping it in the fridge.
Paleo Superfood Slice
1 cup Nourish & Thrive Hazelnuts
1 cup Nourish & Thrive Slivered Almonds
1 cup Nourish & Thrive Organic Cashews or Cashew Pieces
1/4 cup Nourish & Thrive Organic Pumpkin Seeds
1/4 cup Nourish & Thrive Organic Sunflower Seeds
1/4 cup Nourish & Thrive Organic Desiccated Coconut
1 cup Nourish & Thrive Cocoa Butter, melted
4 heaped tbsp Nourish & Thrive Organic Cacao Powder
1/4 cup Nourish & Thrive Maple Syrup
Preheat your oven to 180c and line a baking tray. Add your nuts and seeds to the tray and toss to combine. Place into the oven to roast for about 6-8 minutes until golden. Remove and set aside to cool.
If you haven't already, melt your cocoa butter and measure out 1 cup of it. Set aside until cool. Please note that this will start to thicken as it cools and this is essential. We don't want it to solidify but we do want to start heading in that direction.
Add your cacao and maple syrup to your melted cocoa butter and stir to combine. Line a brownie tin with a beeswax wrap or baking paper and set aside.
Place your now cooled nuts and seeds into a large bowl and mix in the desiccated coconut. Now add your cocoa butter mixture. Toss to combine. Place into the freezer and start to cool it down.
We found that we had to put it in the freezer and stir every 8-10 minutes over the course of half an hour to ensure that the cocoa butter didn't just settle entirely at the bottom. Once you feel as though the cocoa butter mixture is dispersed evenly throughout the nuts and seeds, pour into your lined brownie tin and place back into the fridge or freezer to set entirely.
Cut into 12 pieces once set and enjoy! Store in an airtight container in the fridge.
