Grain Free Granola (GF, DF, RSF)

Crunchy Granola with your favourite yogurt and fresh berries is a great way to start your day or even better, a nice treat or pudding! Our recipe keeps the carbs to a minimal by removing the oats and using nuts instead. We also use less honey than your typical recipes. This granola is so tasty we recommend you save time and make a double or triple batch to last you a month.

Nutrition Per Serve (12 serves): 19g Fat / 7g Protein / 17g total carb

 

Grain Free Granola

You'll need:

250g Mixed Raw Nuts (we like Almonds, Cashew Nuts, Hazelnuts and Brazil Nuts)
1/2 cup Pumpkin Seeds
1/2 cup Dried Fruit (we like Apricots or Dates sliced or Cranberries)
3/4 cup Desiccated Coconut
1/4 cup Honey, melted
2 Tbsp Chia Seeds
1 tsp Vanilla Extract
1 Tbsp Coconut Oil, melted

Preheat your oven to 160c and line a baking tray with baking paper and pour over your coconut oil.

Add 2 cups of your raw nuts and dried fruit to a blender and pulse to create a variety of shapes and sizes. Place this in a large bowl with all other ingredients except the chia seeds. Mix well.

Spoon onto your baking paper evenly. Place in the oven for 8-10 minutes, then remove and stir around. Breaking into chunks as needed. Return to the oven for another 6 minutes, then remove again and stir in the chia seeds. Return to the oven for another 5 minutes.

Remove and allow to cool fully. Store in an airtight container. Makes 12 serves.
